I’m reading an awesome book about how our thinking patterns impact our eating habits, and consequently, our health. Did you know our bodies are designed to eat in accordance with nature? “As Dr. Lustig, one of the leading experts on childhood obesity and sugar, notes, our ancestors could only access sugary foods as fruit or honey or another naturally occurring sweetener, and then only for a few months of the year. Moreover, within vegetables and fruits, fructose is mixed with everything it needs to make it beneficial to our bodies and brains: fiber, vitamins, minerals, enzymes, and phytonutrients, for example. The correct amount of these sugars, in real, whole foods, activates the nucleus accumbens, hypothalamus, thalamus insula, and striatum in a biochemically balanced way. If, for example, you have just finished a power walk, the fructose will be turned into glycogen and stored in the liver until you need it, while the glucose will be used for energy.” (“Think and Eat Yourself Smart” by Dr. Caroline Leaf) Makes complete sense when you think about it. Now think about the modern American diet (or MAD diet). We have access to sugary, highly processed foods 24/7. This why we say that the majority of diseases processes start with diet!
